Tweak release binaries

- Remove version from file names to avoid version redundancy in download URL e.g.:
    https://github.com/airshipit/airshipctl/releases/download/v2.0.0/airshipctl_2.0.0_linux_amd64.tar.gz
- Remove unuseful windows binaries
