Fix contract violation for User resource

When trying to use the io.murano.user resource, you get the error:
io.murano.User.extra['options'] Value {} violates string() contract
because the output is dict, not a string.

This commit changes the contract type to become $ rather than $.string()
which matches what the Project resource has.
