Jan Gutter c65de4e59a Add purge config for ZK snapshots

* The zookeeper install bundled with the operator does not enable
  autopurging.

* This copies the settings from:
  1a48e06b54

* Without this, the zookeeper volumes fill up after about a week using
  the config tested in the CI.
