Nidhi Shivashankara Belur e476061a41 Document Updates for fec operator v2.7.1

This commit includes following updates to the documentation.

- Using helm-override-update to modify the resource name for FEC
  devices.
- Pod Spec example updated to reflect the modified resource name.
